When I was last back in 2001 to visit minun perhe (oh this is too fun!), I was pretty good with "ruoka" however! Fascinating topic, the industrialization of food. I have a piece, somewhere (which when I find it again I'll foward) talks about cake mixes, especially, and how the boxes were changed to force cooks to add eggs and oil only because then the cook felt she'd cooked something homemade. Because my Mom wrote a food column starting in 1959, even as a home economist/nutritionist, her favorites were full of cake mixes and canned soups. I suspect the same thing is going on now with the industrialization of organic and whole foods. Thousands of recipes that used jello, luncheon meats, cake mixes, and other heavily processed foods were promoted in the media. I do not think Finns ever got the full assault of this, so jello salad remains a pretty foreign concept... But when I visit Helsinki in a few week's time I'll leaf though my recipe file and post a recipe for an Italian jello salad which I truly love. Hi Alanna
